Pesto Tuna/Chickpea Wraps


Make this little number for a protein packed lunch: with pesto you really can't go wrong!

Servings: 1

• 1 can tuna in water or chickpeas, drained

• ½ small avocado, smashed

• 2 tbs. homemade pesto

• 5-6 cherry tomatoes, chopped

• 1 tortilla wrap of choice

• Handful of spinach​

  1. Drain the tuna (or chickpeas)

  2. In a bowl, smash the avocado and add the drained tuna or chickpeas and pesto

  3. Add the spinach to ⅓ of the wrap. Top with the avocado tuna/chickpea mixture and top with tomatoes.

  4. Tightly roll the wrap up and cut on a diagonal

  5. Enjoy!
